Corn Muffins

Corn Muffins
Golden grape tomatoes 
sliced upon a board
(jewels plucked from the vine).
Added to a Jiffy mix, 
sweet and tender and oh so fine!
Brings back memories of cooking with my Mom
while sitting on a kitchen stool real high.
I miss her ham and soup beans
served with hot, buttered corn bread.
Eaten with a smile and a satisfied sigh.




Max, my constant companion, watches me when I am in the kitchen. 
He is at the ready in case anything falls to the floor!


*I used golden grape tomatoes instead of red cherry tomatoes.  
I also left out the jalapeno pepper.

    Those little tomatoes look delicious. I still have the old stool that we sat on as kids to help mom cook. It must be 60 years old now. Your mom would be so pleased that you are settled in your new home and remembering cooking with her. Max is adorable!

    1. Thank you, Mildred. Those tomatoes are the sweetest I've ever tasted. I've got quite a few picked off the plants growing here, and I'm trying to find more ways to use.them. They worked really well in this muffin recipe. I often think of my mother when I'm cooking. Good memories of times spent with her. :)

  2. Isn't it wonderful how we can draw from our memories ~ I think of my mother when I'm quilting; she made many quilts after she retired from her "town" job.

  3. YUM..... I love the taste of that Jeffy cornbread mix.. It's sweet cornbread which I LOVE....(People tell me that it's not 'real' cornbread though... ha).... Bet those muffins were good.

    Supposed to get down to 45 here tonight.... Cornbread and soup beans would be delicious for dinner on a cool evening... Yeah---Fall is coming!!!

  4. corn muffins...I haven't had them for such a long time and I love them. I don't even think my kids have ever tasted them. Something to introduce them to. Thanks Daisy....hope you're moved in and enjoying your new place.

  7. Daisy girl, I LOVE cornbread... it is one of my favorite fall items... I won't allow myself to eat it right now, I am still on my mission to lose the weight and get healthy, I am down 42 pounds. I will let myself have some of these awesome treats by next fall :)

  14. I never thought to add tomatoes to the cornbread, but it sounds very tasty ! I can picture you & your mother baking together, savoring her ham & bean soup, and just enjoying being together.

    Everyone needs a 'Max' around, don't you think ?

  15. Your recipe sounds delicious. I will have to try this. Recently we were at a restaurant famous for fried chicken and group of older men came in and sat nearby. They all ordered a bowl of ham and beans with a side of cornbread. It took me back!

    Linda, I have so many memories tied up in food and my mother's kitchen. Isn't that funny how food triggers those thoughts for us? :)

  17. Hot buttered cornbread. YUM. My grandma used to make fried cornbread, which was incredible. (Hey, it's the South, we fry everything!)

  18. Sounds delicious Daisy. I have lots of cooking memories from my childhood- most are associated with the smells- peas and cornbread, fried chicken, homemade breads. Just thinking about them makes me gain weight!
